Sour cherry and banana ice cream cookies (paleo, raw, vegan)


Due to the enormous heat there was some weeks ago (now it turned crazy, thinking it's autumn already), I could not stop myself from making ice cream 24/7. This was a very quick fix, which turned out to be really satisfying. The little sandwiches disappeared in no time.

18 dates (dried)2 cups almonds4 tbsp good quality cocoa3 bananas1 cup sour cherries
Place the dates and almonds in a food processor and process it to the consistensy of really fine and sticky, then add the cocoa and process some more. Form balls and flatten them with a bottom of a wet glass. Set them aside.Place the bananas and sour cherries (deseeded) separated into a freezer bag and in the freezer and let them freeze completely. When frozen, process half of the bananas first in food processor and place a scoop within two layers of cookie and put them immediately into the freezer. The remaining half of the bananas should be processed with the frozen sour cherries and scooped between layers of cookies the same way. Enjoy!
