| Raw Almond-Strawberry Cheesecake Dream |
This incredible cake was created by Sarah Britton at My New Roots. When I first saw it I knew I must have tried it immediately, and so I did. And then I did so the following day, and the following and... yes, I made this cake four times in a week. Incredible isn't it? Well, the this cake is magic. My family requested it over and over again. The most fun part - apart from eating it?! - is that it comes together in a snap! Yeee!

I made them with almonds instead of cashews and strawberries instead of raspberries because that's what I had on my hands back then in the summer, but I can really imagine them with chocolate crust and chestnut cream or with a crust like this and with apple "pie" filling....or pumpkin? Oh, countless possibilities!
