Blueberry cupcakes - creamy, fluffy goodness bursting with blueberries! (paleo)

Still in the theme of blueberry season I could not resist to post as soon as possible this cupcake recipe. I have mentioned in my earlier post that the blueberry muffins were ment to become (and did become at the end) cupcakes with a fluffy, heavenly, light, blueberry cream on top. Of course, paleo, so no (refined) sugar or milk product. Getting interested, huh?

Oh, I just could not resist having this picture here in the post again...I love it.


Blueberry cupcakes
Ingredients for the frosting:1 egg white1/4 cup maple syrup (the best quality if u have)1 tbsp lemon juice1/4 cup blueberries 
Recipe for the cupcakes here
Wash the strawberries and pour in a pan, and cook them on high heat for about max. 10 min to become jam. Start to beat the egg whites slowly with the lemon juice and when almost done add the maple syrup and beat to become fluffy and little marshmallow like. At the end slowly mix inthe blueberry jam. Pour it in a piping bag and frost. Eat them within 2 days, keep in the fridge. (don't worry, they won't last 1 hour!)
